Campo’s philosophy and style of management has always been one of collaboration with talented individuals who truly love and are passionate about food, wine and taking great care of our guests. This year Campo celebrates several employees who have been with us for more than 2 decades. Michelle, Elizabeth’s sister, joined us in 1994, and others have been with us since 1996, something very rare and special in a mountain resort community. Campo is totally about the team and each team member is an important part of the heart and the soul of all that we do. It is the “sum” of so many incredible individuals who have made Campo special from its very first days.
Because of all the passion and love, the restaurant has received many accolades from some of the most prestigious magazines, including Food & Wine, In Style, Ski, Esquire, Glamour, Town and Country, Wine Spectator and many more. Campo has never strayed from its standard of providing fresh, authentic Italian cuisine, complemented by a sophisticated wine menu, with exceptional and personalized service, all in a festive atmosphere.
Elizabeth, Campo’s owner and founder, credits Campo’s success to many great friendships, to talented and passionate chefs, incredibly brilliant and personable managers and a dining room and kitchen team who bring their best each and every day. Adding personal touches that help to create a lively atmosphere that people enjoy being a part of has a big part of the magic. All-in-all, a proven recipe for success!

David Ellsweig, GENERAL MANAGER
When you walk around Aspen and speak of the famous locals, “Campo Dave” is definitely one of them!
David started his restaurant career in high school and worked his way through Arizona State University where he graduated Summa cum Laude. After leaving graduate school at Harvard, David had a strong desire to explore and traveled around the world visiting over 100 countries. Dave’s absolute clarity and certainty of wanting to create the ultimate life experience drew him from Manhattan to Aspen in 2001, where he began working at Campo.
Considered the heart and soul of the Campo Culture, Dave brings incredible devotion to the restaurant’s success. The things that can stress a normal person – like crowds out the door – actually motivate and energize Dave. He ascends physical and intellectual challenges that very few could conquer. His incredible passion for life and continuous curiosity and desire to be the best he can be gives him the innate ability to connect with virtually everybody he meets. There is no one like Dave! And his natural capability to lead, motivate and inspire, combined with his brilliance, have helped build a dining room team that brings something quite special and very personalized to each guest’s experience.
We could not be happier than to have David offering his vision and leadership, welcoming guests and discussing food and wine at Campo Aspen nightly.

Rodrigo Aguilar, HEAD CHEF
Rodrigo’s love of food began at a very young age in his mother’s kitchen in San Luis Potosi, Mexico. Growing up in a large family, Rodrigo would spend countless hours beside his mom observing and helping as she prepared beautiful meals, combining the simple fresh ingredients from their family garden and the meats and poultry from his father’s butcher shop. Even now, in his free time, he continues those beloved family cooking traditions at home with his wife Maria and kids.
After years of cooking with his family, Rodrigo’s professional culinary career began when in 1997 he started working in Aspen and then was later recruited by the owners of Gusto, an Aspen Italian restaurant owned by same group that started Campo de Fiori. In 2004, Rodrigo was asked by Giuseppe to join the Campo team. While Rodrigo managed Campo’s challenging fresh pasta station, Giuseppe began to teach him about the various techniques and ingredients that are part of Campo’s beloved Italian recipes. Giuseppe immediately recognized Rodrigo’s talent and his deep desire to always prepare the freshest and highest quality meals for Campo’s guests.
As Rodrigo’s love for Italian food and his culinary skills grew, after only three years he was promoted to Sous Chef. As Campo’s Sous Chef and Giuseppe’s right hand man for the last 18 years, Rodrigo’s management philosophy has always been about supporting the entire team. His team spirit, teaching, and open communication style has contributed greatly to the high quality Campo dining experience that will continue under his leadership as Executive Chef. We are so looking forward to our guests continuing to enjoy that tradition under the watchful and loving eye of Chef Rodrigo.

Giuseppe Garofalo, CHEF EMERITUS
After 26 years as Campo de Fiori’s incredible Executive Chef, Giuseppe Garofalo transitioned to Chef Emeritus when Campo reopened on May 23, 2025.
Though Giuseppe has retired from his position as Executive Chef to take life a little more slowly and enjoy more time in Italy and with his grandchildren, Giuseppe will continue to remain a part of the Campo Family. This new Chef Emeritus role will allow Giuseppe to lend his experience whenever needed and act as a Campo ambassador to our beloved community and cherished guests. Giuseppe will also keep us true to our authentic Italian roots that he helped create.
After working in a local eatery in his Italian boyhood village of Torre del Greco, Giuseppe attended culinary school in Avellino. After graduation Giuseppe moved to Aspen and landed the Executive Chef role at Campo. Despite Campo’s tiny kitchen and high volume, Giuseppe’s “we will make it happen” attitude provided delicious Neapolitan and Roman dishes that are traditionally served in Italy. His ability to create unique flavors made every dish taste like it came from the best Italian Ristorante.
Giuseppe has helped make Campo one of Aspen’s best and most frequented restaurants and he was will always be a cherished part of our Campo family. We are so grateful for all his care and passion that have been part of making Campo a very special place.

Chris Carmichael, BAR MANAGER
Chris makes everyone at Campo so happy! He always brings to our attention all that we can do to make Campo the best it can be. And he is totally hands on.
A few months after graduating from Plymouth State College in 1992, Chris decided to pursue his passion for skiing and followed his dream of powder days to Aspen. At that time, he began working alongside Elizabeth at the then popular Farfalle restaurant. Both being new to town, Chris and Elizabeth quickly realized that Aspen was one of the best places on earth and wanted to make it a permanent home. Shortly after Campo Aspen expanded and added a bar in 1999, Chris was asked to join the Campo team and it was clear that Chris brought something special to the atmosphere.
His affable personality, along with his strong work ethic, talent and leadership skills, made him the natural fit to run the popular bar. Under Chris’s leadership, Campo’s bar has become one of the most popular stops in Aspen for locals and visitors alike. Even on the busiest nights, Chris makes sure that each guest experiences the flavors and energy that make Campo special.
So come by anytime and check out one of Chris’s delectable cocktails, have a bite of food, and share in a conversation with him. You will quickly understand the great energy and passion that Chris brings to make Campo’s bar an Aspen hotspot.

Justin Heiber, ASSISTANT MANAGER & CATERING EVENT SPECIALIST
Justin grew up in Calabasas, California where he developed his love of food at a very young age. As a young boy, he began cooking and baking with various family members who delighted in sharing the secrets, stories and anecdotes of generational family recipes and their history. As an avid golfer, fly fisherman and outdoor enthusiast, with a deep love of nature, Justin realized at a young age that Colorado could provide a great mixture of work and the pursuits that reflect his adventurous spirit and outdoor lifestyle that he shares with his wife Marianne and their beloved young daughter.
After working at a large Denver based catering company for a few years, in 2013 Justin moved to Aspen to be closer to the mountains and start his local culinary career as a Campo de Fiori bartender. While tending bar he helped create many of Campo’s very popular signature cocktails. Over the years Justin distinguished himself as a dynamic, energetic and unflappable leader and began to help run catering events and occasionally manage the door on Dave’s nights off. In 2024 he was promoted to assistant manager.
We feel very lucky to have a leader like Justin on the Campo team. His passion, intelligence, attention to detail and deep knowledge of not only our restaurant business, but also our catering business has been a great addition to the Campo management team.
